Menu for week of 4/21/08

Tuesday: Up for grabs
Wednesday: Chicken and rice in slow cooker (see below for recipe)
Thursday: Grilled chicken and pasta salad
Friday: Up for grabs

Chicken & Wild Rice Casserole
(a recipe from Sandy H., passed on to me by my sister Andrea)

1 Chicken, cut in pieces
1 box (small) Uncle Ben's Wild Rice
1 can mushrooms (w/ juice)
1 pkg. slivered almonds
1 can cream of chicken soup
1 can cream of mushroom soup
1 can water

Combine soups, almonds, rice and 1 can of water. Stir in 1/2 of the rice seasoning pack. Put in a 9x13 dish. Melt some butter to dip chicken pieces in*, then lay the chicken on top of the rice mixture. Sprinkle with remaining 1/2 of seasoning pack. Bake at 250 degrees for 2.5-3 hours - do not cover.

OR... follow directions above but place in a slow cooker and cook on low for 7-8 hours.

*I leave the butter step out to save a few calories. (Forgive me, Pioneer Woman!)

Ok, you have a couple of "up for grabs" days so let me make a suggestion.

I hate almost all sloppy joes . . . with the exception of these. I make them at least twice a month. In fact, I'm making them tonight.

Just a suggestion!

P.S. The potato salad recipe at the bottom . . . not my favorite.

Actually, you already influenced me (through your blog) to make those. And they are THE BEST. I made them for a family get together and I don't think I'm at liberty to say exactly how many my brother-in-law ate. :-D In fact, they are already on the menu for next week. Great minds think alike!

As for the "up for grabs" days... That's mostly because there are at least two days a week when I arrive home from work and declare that I just am not in the mood to make anything. Or because our schedule ends up getting rearranged and we have to eat on the go. Or because we decide that eating at Buffalo Wild Wings sounds so much better than eating Hamburger Helper.

Thanks for the info about the potato salad - last time I made the sloppy joes I was tempted to try that, too, but decided I didn't have the time. Now I know to avoid it altogether.
